Infused Lemon Coffee Cake
Ingredients: 1 Krusteaz Meyer Lemon Cake Mix 1/2 stick unsalted butter
1/2 stick cannabutter 1 Tbsp Speakeasy 710 THC Tonic 1/2 c. cold water Nonstick cooking spray
8½ x 4 ½ x 2 ½ -inch loaf pan. --------------------------------------- 1. Pre-Heat oven to 350°F. Lightly grease 8 ½ x 4½ x 2 ½ -inch loaf pan.
2. Melt unsalted butter and canna-butter in microwave until soft.
3. Stir together water, melted butter and cake mix until moistened.
4. Stir 1 tbsp THC Tonic into batter. 5. Spoon batter into prepared pan.
6. Bake 44-46 minutes or until toothpick inserted into center comes out clean. Cool 5 minutes; gently loosen and remove from pan. Cool cake completely before drizzling with lemon glaze.
7. For Glaze: Whisk together lemon glaze mix (enclosed), 4 droplets of thc tonic, and 1/4 cup water until glaze is desired consistency.
8. Drizzle over cooled pound cake. Allow glaze to set before serving.
High Altitude: (over 5000 feet): Prepare as directed, adding 1 tbsp all-purpose flour and an additional 2 tbsps water.
